    Steakhouse Pizza with Blue Cheese and Onions

    Take meat lover's to a whole new level with this Steakhouse Pizza, which features top sirloin or filet mignon steak, blue cheese, onions, and arugula.

    When I signed up to teach a meat pizza (a.k.a. meatzza) class at COOK last month, I already knew the first two of three pizzas I'd be making: Pepperoni with Broccoli Rabe and Hot Honey and Chicken, Mushroom, and Sage. Those two would show the range that meat pizzas can cover. For the third pie, I needed something really meaty and a bit sophisticated. (And I may have also been looking for a reason to splurge on super-tender, really good cuts of beef.) Hence, Steakhouse Pizza was born.

    Even if you are a blue cheese super-fan, trust me on the amount used here. Too much will definitely overpower the steak and onions and throw off the balance of creamy-chew-crunchy texture.

    Also, as I hinted above, please take this opportunity to spend a little more than normal on a really good steak. It is called Steakhouse Pizza for a reason. And since you only need one 6 to 8-ounce steak per pizza, it's much easier on your budget than a full-size steak dinner. Since the steak goes on raw and is cooked for just a few minutes in the oven, you want it to be a tender cut and also high-quality from a source you trust.

    Steakhouse Pizza with Blue Cheese and Onions

    Tender steak, tangy blue cheese, caramelized onions, and crunchy arugula round out this steakhouse pizza, which is especially delicious with a glass of red wine.

    Ingredients

    • 1 (6 to 8-ounce) top sirloin or filet mignon steak very thinly sliced
    • 3 tablespoons steak sauce such as A1 brand, divided
    • 3 tablespoons unsalted butter divided
    • 1 medium red onion thinly sliced
    • kosher salt and freshly ground black pepper
    • 1 (14 to 16-ounce) ball pizza dough
    • ½ cup crumbled blue cheese or up to ⅔ cup
    • 1 handful baby arugula chopped

    Instructions

    • Preheat the oven to 550°F or as high as it will go (if using a baking stone/steel; place the stone/steel in the oven before you start preheating).
    • In a medium bowl, combine the sliced steak with 2 tablespoons of the steak sauce. Toss well to coat. Set aside to marinate while you prep the other toppings.
    • Melt 2 tablespoons of the butter in a medium skillet over medium-high heat. Add the onions, a pinch or two of salt, and a few grinds of black pepper. Cook, stirring frequently, until the onions and soft and beginning to caramelize. Turn off the heat and set the onions aside.
    • Stretch or roll out your dough to a 12-inch circle, then transfer it to an oiled baking sheet or a floured pizza peel (if using a baking stone/steel).
    • Place the remaining tablespoon of butter in a small ramekin. Melt it in the microwave (about 20 seconds), then stir in the remaining tablespoon of steak sauce.
    • Brush the butter–steak sauce mixture on the dough, making sure to get all the way to the edges. Season with salt and pepper, then top with the onions and blue cheese.
    • Transfer the pizza to the oven and bake just until the cheese is bubbling and the crust has just started to turn golden, about 6 minutes on the baking sheet, 3 or 4 minutes on the baking stone/steel.
    • Take the pizza out of the oven. Arrange the steak on top, keeping the slices in a single layer. Return the pizza to the oven and bake for another 2 to 3 minutes or until the steak slices are brown on the edges but still a little pink in the center.
    • Take the pizza out of the oven. Sprinkle with the chopped arugula. Slice and serve, passing more steak sauce at the table.
