    Four Pizza Dough Recipes to Master

    Want to tackle homemade Neapolitan pizza crust, or looking for a go-to dough for weekly pizza nights of your own? In the spirit of spring cleaning, I've gussied up my favorite pizza dough recipes and collected them here for easy reference.

    Starting from longest to shortest rise time, there's the cold-fermented Neapolitan pizza dough recipe, which takes about 2 days to make; slow-rise dough that rises for 20 hours at room temperature; weeknight dough that takes about an hour from start to finish; and a 25-minute dough that calls for beer instead of yeast (click on the photos below to view the recipes). All you need to make any of these pizza doughs are:

    • A large bowl
    • Measuring cups and spoons
    • A sturdy wooden spoon or dough whisk*
    • Heavy-duty rimmed baking sheet or baking stone/steel, for baking
